Instant Pot NewPotatoes

I call them instant pot new potatoes but what do you call them where you live? I grew up in Yorkshire in northern England.

You would get excited when new potatoes came into season and you could use them in potato salads, serve them with salmon or just binge on them because they tasted so good.

My grandad would grow them, and they were even betterknowing that my grandad had made them for me.

But in other parts of the world you may call them instant potbaby potatoes, instant pot fingerling potatoes, instant pot red new potatoesand so many other things.

Regardless of what you call them, let me tell you now, they are one of the best foods to cook in the instant pot pressure cooker.

Though, I have an even better way of cooking them today. You see this instant pot new potatoes recipe originally featured on the blog on the 4th of January 2017.

It was my 3rd ever instant pot recipe I published and I updating it today BECAUSE I have a Mealthy Crisplid and these new potatoes are now in a totally different league.

They are crispy and taste like the potatoes I get served in my local Portuguese restaurant.

They serve garlic butter baby potatoes with salmon and broccoli and it is AMAZING. What originally inspired me to create instant pot broccoli, along with instant pot salmon and broccoli.

Why Make NewPotatoes In The Instant Pot?

I love to cook new potatoes in the instant pot, because it is like cooking perfectly steamed new potatoes.

Then you are taking your garlic butter potatoes to the next level and crisping them in a wonderful Mediterranean coating.

In many restaurants they offer twice cooked potatoes and talk about how amazing it is.

Well this is exactly what you are doing here, it is just an easier way of doing it thanks to the wonderful kitchen gadgets that help us out in today’s modern world.

Instant Pot NewPotatoes Ingredients & Gadgets

There are 5 main ingredients that go into instant pot newpotatoes:

  • New Potatoes
  • Garlic
  • Butter
  • Extra Virgin Olive Oil
  • Seasoning

Our instant pot new potatoes are a Mediterranean recipe and therefore the seasonings are based on this. But you could swap the seasonings for a different type of favourite food.

Imagine adding cajun seasoning and it will be like potato wedges from KFC or adding garam masala for an alternative to Bombay potatoes.

The gadgets that we used, was our Mealthy Multipot 6qt and our Mealthy Crisplid. You could use any standard 6 or 8 quart electric pressure cooker along with the Mealthy Crisplid or use this recipe with a Ninja Foodi.

Instant Pot SteamedNot Boiled New Potatoes

We start our instant pot new potatoes by steaming the new potatoes in a trivet inside of your electric pressure cooker.

This almost cooks them so that all that is left is to crisp them up.

In the old days you would boil your new potatoes. I haven’tdone this for years as it ruins the potato and anything else you boil.

Boiling new potatoes strips the flavour from them and thenutrients so if we steam them instead it keeps the goodness and they taste somuch better.

To steam new potatoes in the instant pot is EASY and it’s a case of loading potatoes onto your steamer basket or trivet, adding some water and letting the instant pot go to pressure.

It’s a very similar process as boiling, but quicker and healthier.

Then once you have steamed your new potatoes you can crispthem up which is when I really start licking my lips and getting excited overcrispy delicious potatoes.

A good steamer basket is essential with the instant pot and that is why we have created a post with the best instant pot steamer baskets. I recommend you read it if you don’t have a good steamer basket yet.

Instant Pot New PotatoesTime

Making Instant Pot New Potatoes is fast too. Forget roastingyour new potatoes in the oven for an hour. You can cook instant pot new potatoesin JUST 8 minutes.

This takes them to garlic butter new potatoes like these:

BUT if you want delicious CRISPY new potatoes like this:

Then you want to cook your new potatoes using the Mealthy Crisplid for a further 5 minutes at 220c/430f.

Making it a total cook time of 13 minutes for the mostamazing crispy new potatoes.

Making instant pot newpotatoes is EASY and it is a case of a steaming your new potatoesfirst in the instant pot and then using the crisp lid to turn them into the crispiest,garlic flavoured potatoes you have ever tried.

  1. Place your new potatoes into your steamer basket and load the instant pot inner pot with a cup of water.
  2. Steam your new potatoes, release pressure and drain,
  3. Add your new potatoes to a bowl, load with other ingredients and mix with your hands.
  4. Place the new potatoes back in the instant pot and using the crisplid cook to crisp up the skins of your new potatoes.
  5. Serve warm.

Instructions

  • Place a cup of water into your instant pot inner pot. Add your trivet and load it with your new potatoes.

  • Place the lid on the instant pot, set the valve to sealing and cook for 8 minutes on manual pressure.

  • When it beeps remove the new potatoes in their trivet and drain the water from the bottom of the instant pot. Pour the potatoes from the trivet into a mixing bowl.

  • Load the mixing bowl with the other ingredients and mix well.

  • Load your trivet for the Crisplid into your instant pot and add the seasoned new potatoes.

  • Place the Mealthy Crisplid on top of the Instant Pot and cook for a further 5 minutes at 220c/430f.

  • Serve while still warm.

Notes

You can also cook more new potatoes at once and increase it to 1.5kg. If you do adjust the cooking time to 10 minutes instead of 8.

Because it cooks from the top, if you have a lot of new potatoes you will want to shake them halfway through so that the Crisplid will cook those on the bottom and not just those on the top.
