What do I do if my fudge doesn't harden? ›

How can you fix soft fudge? Put it in a microwave safe bowl that is large enough that it won't boil over. Reheat it to the boiling point and cook for about 3 more minutes. Then you can beat some powdered sugar into it if this doesn't make it set.

How long do you leave fudge to set? ›

Swirl the chocolate through the mixture once using a spatula or the handle of a wooden spoon. Leave the fudge to set overnight.

Do you cover fudge while it sets? ›

What is chocolate fudge made from? ›

Fudge is a dense, rich confection typically made with sugar, milk or cream, butter and chocolate or other flavorings. The base for fudge is boiled until it reaches the soft-ball stage (135 to 140 degrees F), then stirred or beaten as it cools to minimize the formation of sugar crystals.

How do you firm up homemade fudge? ›

If your fudge is soft or runny, it probably didn't come up to a high enough temperature while it was cooking. Put it back into the saucepan and add 1–2 US tbsp (15–30 ml) of 35% fat whipping cream. Stir the fudge as it heats, but only until the sugar in the chocolate is completely melted again.

Is evaporated milk or condensed milk better for fudge? ›

Tips For Making Dad's Old Fashioned Fudge

Choose Pure Vanilla Extract- For a wonderfully rich and robust flavor, pure vanilla extract is recommended over imitation vanilla. Use Evaporated Milk- Make sure to use evaporated milk and not sweetened condensed milk.

Why is my fudge not setting? ›

The main reason is that your Fudge has not reached the optimum temperature. If your mixture only reaches 110 or 112 degrees Celsius it will always be soft. That's why we recommend investing in a sugar thermometer. Another reason your Fudge is not setting is that the ratio of liquid to sugar is too high.

Where do you leave fudge to set? ›

Take off the heat and beat in the vanilla and salt with a wooden spoon, then continue beating until the fudge has thickened and lost its shine. Pour into the tin and leave to set. Once it's firmed up a little, after about an hour, slice into squares and leave to cool completely. Best kept refrigerated.

Can I fix fudge that didn't set? ›

OPTION 3) Sieve together some powdered sugar and cocoa powder, and gradually work this into your unset fudge until it reaches the consistency of dough, then roll out and cut into squares, or shape into balls and then roll in powdered sugar (roll the balls in icing sugar, not yourself).

What is the secret to smooth fudge that is not gritty? ›

Once a seed crystal forms, it grows bigger and bigger as the fudge cools. A lot of big crystals in fudge makes it grainy. By letting the fudge cool without stirring, you avoid creating seed crystals.

Should I stir fudge while boiling? ›

Stir the ingredients to dissolve the sugar until the mixture comes to a boil. If your recipe uses milk, stirring will keep the mixture from curdling. But once it reaches about 236–238 degrees F/113–114 degrees C (the "soft-ball" stage), do not stir it or even shake the pan.

What's the difference between fudge and chocolate fudge? ›

Chocolate uses elements of the cacao bean; even in creating white chocolate, cocoa butter from the cacao bean is the main ingredient. Fudge, however, is a confection made both with and without cocoa or other chocolate elements. You can substitute vanilla or peanut butter, for example, for the chocolate.

What's the difference between fudge and fudge brownies? ›

Brownies have a cake-like texture with a crispy top and a moist, fudgy center and are typically baked in a rectangular pan. Fudge, on the other hand, is typically made by cooking a mixture of sugar, butter, and milk or cream until it reaches a soft, chewy consistency.

Is fudge healthier than chocolate? ›

Fudge typically contains more sugar than chocolate, so it may not be the best choice for those looking to limit their sugar intake. On the other hand, dark chocolate is a good source of antioxidants and can provide health benefits when consumed in moderation.

Can you put fudge in the fridge to set? ›

NEVER REFRIGERATE your fudge as this will draw out the moisture and leave you with dry, crumbly fudge.

Why is my fudge a little soft? ›

If the fudge is very soft and slightly chewy then it is possible that it did not quite cook to soft ball stage and next time the mixture should be cooked to a slightly higher temperature (soft ball is 112-116c/235-240F and a sugar or candy thermometer can help).

Can I put fudge in freezer to set? ›

Freeze to set: Move the pan to the freezer to speed up the set time. Cut and enjoy: After 30 minutes in the freezer cut the fudge into squares. Enjoy!

How do you fix crystallized fudge? ›

Pour the fudge back into your pan, and add about a cup of water to it, along with a tablespoon or two of evaporated milk, whipping cream, or whatever cream you're using. Some people skip the water and just add cream to the mixture to reheat.
